Crouton and Veggie-filled Salad

The simple seasoning and the olive oil really bring out the sweetness and flavor of the vegetables. The crispy croutons add a nutty fragrance.

Ingredients: 3 to 4 servings

Thickly sliced loaf bread or baguette
1 slice (if using a baguette, about 10 cm)
Bologna sausage (or wiener sausage)
1 medium (if using small wiener sausages, about 4)
1 clove
Processed cheese
2 (40 g)
Cherry tomatoes
about 4
Extra virgin olive oil
1 tablespoon (for frying) + 1 tablespoon (for the salad) + 3 tablespoons (to drizzle on the bread)
Krazy Salt or coarsely ground black pepper and salt
to taste
Grated cheese
about 1 tablespoon


1. Cut the bread up into 1.5 cm cubes. Toast in a preheated 200°C oven or toaster oven for about 5 minutes until crispy.
2. Cut the tomatoes in half, and cut up the cheese into easy to eat pieces.
3. Finely chop the garlic. Cut the sausage up into bite size pieces. Boil the broccoli until it's still firm or microwave for about 4 minutes.
4. Heat 1 tablespoon of extra virgin olive oil in a frying pan, and add the garlic.
5. When the garlic is fragrant add the sauce and stir fry. Add the broccoli next and stir fry, and season with Krazy salt.
6. Cool down the stir fried ingredients from Step 5 a bit and mix with the ingredients from Step 2, together with a tablespoon of olive oil.
7. Top with the croutons from Step 1, drizzle with the remaining 3 tablespoons of olive oil, sprinkle some grated cheese on top and it's done.

Story Behind this Recipe

I wanted to come up with an easy-to-make salad using everyday ingredients and lots of vegetables. It becomes a main dish depending on the amount of croutons.
