Light and Refreshing Carrot and Raisin Salad

The refreshing flavor and the sweetness of the raisins go together so well and are delicious.

Ingredients: 2 servings

Carrot, medium
〇 White wine vinegar or rice vinegar
1 1/2 tablespoons
〇 Olive oil
2 teaspoons
〇 Sugar
2 teaspoons
〇 Black pepper
A generous amount
To taste
To taste


1. Slice the carrot into a long julienne. Sprinkle with a little salt, and let rest for a bit.
2. In the meantime, combine the 〇 ingredients. Mix well with the carrot when it has wilted.
3. Add the raisins and taste. Add some more salt if it's needed, and you're done.
4. You can eat it right way, or after half a day.
5. I want to eat the whole carrot so I don't peel it, and I don't squeeze out the moisture at Step 1. If it gets too salty at Step 1, rinse quickly under running water.
