Refreshing Chinese Cabbage Cole Slaw

Raw Chinese cabbage has a mild flavor, so you can easily eat a ton of this.

Ingredients: About 4 servings

Chinese cabbage
1/4 head
Canned corn
A generous amount (to taste)
Sliced ham
4 pieces
○ Extra virgin olive oil
1 tablespoon
○ Mayonnaise
2 tablespoons
○ Vinegar
2 tablespoons
○ Sugar
2 tablespoons
○ Salt
1 teaspoon
○ Pepper
A dash


1. Thinly slice the Chinese cabbage. You can also slice it with a knife; thinner slices would better absorb the seasoning. Slice the ham into thin strips.
2. Combine the ○ ingredients. Combine the Chinese cabbage, ham, and drained corn into a bowl, and toss with the mixture of the ○ ingredients.
3. That's it! It's ready to serve. This cole slaw tastes great served right away, but if you let it sit for about 30 minutes, the flavors nicely meld together.
