My Simple Mushroom Soup

This is an easy soup that will be ready in no time at all.

Ingredients: 4 servings

Shimeji mushrooms
1/2 pack
Enoki mushrooms
1/2 pack
King oyster mushrooms
1/2 pack
Consomme soup stock cube
Olive oil
1 teaspoon
Cooking sake
1 teaspoon
2 cups (400 ml)
Usukuchi soy sauce
1/2-1 teaspoon
Salt and pepper
as needed
Parsley, grated cheese


1. Thinly slice the onion and cut the mushrooms into bite-sized pieces.
2. Heat olive oil in a pot and sauté the onions and mushrooms. Add the cooking sake and when the mushrooms are soft, add water and consomme.
3. Bring to a boil and cook for 1-2 minutes. Add soy sauce and pepper and adjust the seasoning with salt if necessary.
4. Sprinkle parsley and grated cheese on top, and it's done!
