Basic Bread Dough

This is our family's recipe for basic bread dough because it has a nice texture and it's easy to handle.

Ingredients

Bread (strong) flour
240 g
Cake flour
60 g
Amount of sugar for savory bread
20 g
Amount of sugar for sweet breads
30 g
Salt
5 g
Powdered skim milk
10 g
Dry yeast
6 g
Egg
30 g
Water
170 g
Shortening (For savory bread )
20 g
Butter (For sweet bread)
30 g

Steps

1. I use shortening for savory bread and butter for sweet bread.
2. Add the butter or shortening after the dough has formed a good stretchy gluten film.( When you can see your fingers through the stretched dough.)
3. If using a bread machine, add the butter or shortening 10 minutes after it starts kneading.

5. Use the leftover egg to glaze the bread.
6. The water temperature should be about 30℃ in spring, 10℃ in summer and 45℃ in winter.
7. The butter and shortening should be room temperature so that it doesn't lower the temperature of the dough, and mixes into the bread dough well.
