Muffins Made Easily with Pancake Mix and Heavy Cream

Just mix four ingredients and bake for crispy and fluffy muffin-like cupcakes.

Ingredients: 8 small muffins

Pancake mix
150 g
Heavy cream (Non-dairy heavy cream is fine.)
100 ml
Egg
1
Sugar
40 g

Steps

1. Prepare the ingredients.
2. Combine the egg and sugar into a bowl and mix with a whisk.
3. When mixed, stir in the heavy cream.
4. Add the pancake mix to Step 2 and cut in the batter with a rubber spatula.
5. Pour the batter into the muffin moulds 60-70% full.
6. Bake for 20-30 minutes in an oven preheated to 170ºC. When a skewer poked through comes out clean, they are done.

Story Behind this Recipe

Kneading and melting the butter is a pain, so I used heavy cream, which I got cheaply to make these really easy muffins.
