Homemade Yokan Made With Sweet Bean Paste and Kanten

You can make this easily at home.
Try this recipe if you have some anko on hand.

Ingredients

Koshi-an or Tsubu-an (I used homemade)
300 g
Kanten powder
4 g
Water
100ml
Sugar
To taste
Salt
To taste

Steps

1. Dissolve the kantenr in water. Turn on the heat.
2. When it is boiling, add sweetened bean paste and stir. Add sugar or salt if you like.
3. When it comes to a boil again, turn off the heat. Pour in a container, even though it is piping hot.
4. It will harden quickly. When it has cooled a bit, put the container in the refrigerator to cool.
5. It feels so satisfying when I can slice it neatly! Done!

Story Behind this Recipe

When I made coarsely mashed sweet bean paste at home, I decided to use it up by making it into Japanese sweets.
I referred to the way my mother-in-law makes yokan, and made a few changes.
