Sweet-Spicy Sweet Potato and Pork

I simmered sweet potatoes and pork in sweet and spicy sauce. Really goes well with rice.

Ingredients: Serves 4

Sweet Potato (medium)
Pork (block, thinly sliced, etc.)
200 g
Shimeji mushrooms
1 pack
● Water
200 ml
● Dashi stock granules
2 teaspoons
● Sake
3 tablespoons
● Mirin
3 tablespoons
● Sugar
2 tablespoons
● Soy sauce
2 tablespoons


1. Chop the sweet potatoes roughly into small sizes, and the pork into bite-sized pieces. Discard the stiff roots of the shimeji mushrooms and shred them apart.
2. Heat some oil (unlisted) in a pot and cook the pork. Here, I used a block of pork shoulder roast.
3. Add sweet potatoes to the pot from step 2.
4. Add shimeji mushrooms and ● ingredients - in listed order - to the pot from step 3. Cover the pot and simmer over medium to high heat. Stir-up from the bottom while cooking.
5. It's done when the sauce has reduced Scatter some green scallions if you wish. If you set it aside briefly with a lid on, the flavor really soaks in.
