Healthy Okara Cookies

A great low-calorie and healthy treat made from okara (soy pulp). If you are trying to lose weight, try this.

Ingredients: 20 Cookies

Fresh okara
1 tablespoon
As needed
Note: Adjust the amount of milk depending on the moisture content of okara.


1. Mix sugar into the okara. Try to crush any okara grains. Mix in milk (or water) if it's too dry.
2. Spread it out evenly until it is about 2mm thick. Use your hands if you need to. Make sure it's on the thin side.
3. I used a refrigerator egg holder and plastic wrap to create the round cookie shapes.
4. Lay on cooking paper and cook in a 500W microwave for about 2 minutes. Flip over and cook another 2 minutes. (This is for 10 cookies).
5. When they cool, they'll become crispy and ready to eat. Keep an eye on the cookies and adjust the cooking time according to your microwave. Heat until they are crispy.
6. In this example, → they got burnt a little from baking too much. Make sure you keep an eye on them while they are baking.
7. Addendum: If you use moist okara (from a local tofu maker), then you won't need to use milk to get the same results.
8. Addendum: Cook for 3 minutes in a microwave and then for about 90 seconds in a heated toaster oven until they turn a nice color.

Story Behind this Recipe

I once made okara mochi but cooked them too much... but when I tasted them, they were like cookies!!
