Microwaved Oil-Free Marinated Mushrooms

I love marinated mushrooms, but they usually require lots of oil. Try this light oil-free version and enjoy it without guilt.

Ingredients: 1 storage container's worth

King oyster mushrooms (or other mushrooms)
1 packet
* Sake
1 tablespoon
* Soy sauce
1 tablespoon
* Mirin
1 tablespoon
* Lemon juice
1 tablespoon
* Yuzu pepper paste
1 scant teaspoon


1. Cut the mushrooms up into easy to eat pieces.
2. Put all the * ingredients in a heatproof storage container.
3. Add the mushrooms, cover loosely with a lid or plastic wrap, and microwave for 3 minutes at 500 W.
4. When the seasoning ingredients boil up and the mushrooms are wilted, mix the contents of the container well. Cool down, and store in the refrigerator.
5. You can make this in a dedicated microwave cooking container too. Try using twice the amount marinade with enoki and shimeji mushrooms. If you like sour marinades, add more lemon juice.

Story Behind this Recipe

I made it on the stove in a pan to start with, but I thought "Maybe I can make this in the microwave" and tried it out - and it worked out great. So here's the microwave version.
