Sautéed Salmon and Broccoli Salad

Sautéed Salmon and Broccoli Salad

I made in-season fresh salmon and broccoli into salad that's easy for kids to eat.

Ingredients: 2 to 3 servings

Fresh salmon
2 slices
2 pinches
Cooking sake
2 tablespoons
About 1/2 of a stalk
● Mayonnaise
1 tablespoon
● Oyster sauce
2 teaspoons
● Sugar
1 teaspoon
● Lemon juice
1 teaspoon
● Mustard
About 1/2 teaspoon
Salt and pepper (to taste)
to taste

1. Take the skin off the salmon and cut into bite sized pieces. Salt and sprinkle with cooking sake.
2. Boil the broccoli or microwave until tender.
3. Mix the ingredients marked ● together.
4. Put the salmon from Step 1 into a frying pan, cover with a lid and steam-cook over low heat.
5. When the salmon is cooked through (see Tips), remove the lid, turn the heat up to medium and let the cooking sake evaporate
6. Turn the heat down back to low, add the ● ingredients, and mix. Add broccoli, mix again and turn off the heat.
7. Adjust the seasoning with salt and pepper to finish.

Story Behind this Recipe

My children aren't too fond of fish, but they will eat up this salad-like dish pretty well. The fishiness disappears with a sprinkle of sake, so it's easy to season.
