Egg Balls with Cheese (For Lunchboxes)

Egg Balls with Cheese (For Lunchboxes)

These curry flavored egg balls with cheese are great in bentos. With a dollop of hamburger sauce, they go really well with rice.

Ingredients: 2 large or 3 medium balls

● Eggs
● Mushrooms and vegetables of your choice (I used shiitake mushrooms here)
A small amount (2 shiitake mushrooms)
● Melting cheese
20 g (1 slice of sliced cheese)
● Tomato ketchup
1 teaspoon
● Sugar (optional)
1 teaspoon
● Mayonnaise
1 teaspoon
● Curry powder
1/2 scant teaspoon
Cherry tomato (optional)
1 or so
★ Tomato ketchup
1/2 tablespoon
★ Okonomiyaki sauce
1/2 tablespoon
★ Sugar
1 teaspoon
Parsley (optional)
To taste

1. Chop up any ingredients to be used as filling finely. Slice the cherry tomatoes in half horizontally.
2. Mix the ● ingredients together well, then add the chopped up ingredients from step 1. (If using cheese, rip it up or chop it up finely.)
3. Heat some oil in a frying pan, pour in the mixture from Step 2, and make soft set scrambled eggs.
4. Line a small heatproof container (such as a small teacup) with plastic wrap. Put a cherry tomato half in cut-side down.
5. Add the cooked egg to the cup.
6. Wrap up in the plastic wrap and twist closed.
7. Invert, and microwave for about a minute at 500-600 W. Leave to cool and set.
8. Mix the ★ ingredients together in a cup.
9. Put the combined sauce on top of the egg balls. Top with parsley (optional) and they're done.
10. Substitute another slice of cheese for the mayonnaise for a richer flavor, to taste.

Story Behind this Recipe

I wanted to come up with a recipe for a cute bento item that can be made with eggs and cheese, even when there's no meat on hand. The added hamburger sauce gives them a rich flavor. Even chopped up vegetables are gobbled up when they're in these little balls.
