Simple Hand-Kneaded Bread (proved in the fridge)

Simple Hand-Kneaded Bread (proved in the fridge)

You can make this in a short amount of time even though it is hand kneaded, and you don't have to use up a lot of energy! Let it sit in the fridge overnight after rolling. You can enjoy fluffy bread by just baking it in the oven in the morning.

Ingredients: Three 8-10 cm diameter rolls

Cake flour
50 g
Bread (strong) flour
150 g
Boiling water
100 ml
Cold milk
50 ml
Dry yeast
1/2 teaspoon
1-2 tablespoons
Salted butter
15 g

1. Mix the cake flour and 50 ml hot water together in a bowl, and stir with a spatula until the mixture is no longer floury.
2. Mix the remaining 50 ml hot water and milk together in a measuring cup, and soak the dry yeast in it.
3. Add all of the remaining ingredients to the bowl from Step 1, stir in Step 2, and then knead it together by hand after the dough starts to come together. There is no need to strike the dough on the surface, you can completely knead it in the bowl!
4. Once the butter is blended throughout the dough, that's a good indication that you can stop kneading.
5. Cover the bowl with plastic wrap, and let it sit for 10 minutes at room temperature. It doesn't have to be particularly warm.
6. Divide the dough, and shape it however you like. It is easier to move the dough after shaping it if you place it on a lightly-greased pan or sheet of parchment paper.
7. Place the bread into a plastic storage container and let the bread prove in the fridge overnight. Refer to Recipe ID: 644197 if you are going to put them in the fridge inside the pan.
8. Take it out the fridge in the morning and pop it in the oven as it is. Set the oven to 200℃ without preheating, and switch it on! The bread will be ready in 20 minutes.

Story Behind this Recipe

I got sick and tired of washing my food processor, and figured there had to be an easier way to make the dough from Recipe ID: 644197
