Sweet and Salty Stir Fried and Simmered Sweet Potato and Bonito Flakes

This is a warm and comforting side dish covered in bonito flakes.
The bonito flakes soak up the simmering liquid and become sweet and salty. You'll eat so much rice with this!

Ingredients: about 2 people

Satoimo (taro)
(small) 5-6
Sesame oil
1/2 tablespoon
◇Water
1 cup - 200ml
◇Sake
1 tablespoon
◇Sugar
1 tablespoon
◆Soy sauce
1 tablespoon
◆Mirin
1 teaspoon
◆Salt
a small amount
Bonito flakes
1 pack

Steps

1. Peel the skins from the potatoes, and slice into 2-3 round, and bevel the edges. Sprinkle salt to remove the slime, and rinse with water.
2. Heat sesame oil in a pot, and saute the potatoes. Add in ◇, boil for 2-3 minutes, and then add in ◆. Cover with a drop lid, and boil it down until about 1 cm of broth remains.
3. Add the bonito flakes, and briskly mix together so that they soak up the broth, and it is done once the flavor has settled.
