Microwave the tofu for 1 minute, add the warmed tofu, finely chopped shiitake mushrooms, chicken tenders, grated wheat gluten, and • flavoring ingredients together in a bowl.
Add the meat mixture from step 1 in a pan coated with olive oil after rolling them up into bite-sized portions, add Japanese sake, and steam cook.
Once one side has browned a bit, flip over, and transfer to a plate after they have cooked through.
The meat mixture up to this point is the same as "Diet No-Fry Tofu Sweet N' Spicy Meatballs" (Recipe ID: 953288), so you can use half to make these.
Cover with flour, whisked egg, and panko, cook in a pan coated with olive oil, and take them out onto plates after they have turned golden brown.
Garnish with soy sauce, lemon, or ketchup, and it is done .
Story Behind this Recipe
I ate a dish similar to this at one of my favorite cafés, figured it would be easy to make at home, and tried to figure out how to do it without frying. This recipe might not exactly resemble minced katsu, but that's the name that the cafe used, so I used the name as-is.
About 1 teaspoon of olive oil should be sufficient depending on the size of the pan used in step 5, but I want to make these crunchy all over, so I always use 1~2 tablespoons.
