Miso Flavored Hot Pot with Chicken Thigh and Vegetables

A rich hot pot with Hacho miso based soup. At the end, add udon noodles and enjoy.

Ingredients: 3-4 servings

Dashi stock broth
800 ml
★ Hatcho miso (or red miso)
4 tablespoons
★ Garlic
2 cloves
★ Ginger
1 knob
★ Sake
2 tablespoons
★ Mirin
2 tablespoons
Chicken thigh
Napa cabbage
Chrysanthemum greens
1/2 bag
Shimeji mushrooms
1/2 bunch
Enoki mushrooms
1 pack
Japanese leek
Daikon radish, medium
Carrot, medium
1 block
Shirataki noodles
1 pack
Udon noodles
1~2 servings


1. Grate the garlic and ginger. Cut all the ingredients into bite-size pieces.
2. Boil dashi in a clay hot pot and add ★ marked ingredients. Dissolve the miso well. Add other ingredients starting with ones that take longer to cook.
3. Cover with a lid and cook over medium heat. Skim off scum and cook until all ingredients are cooked through.

Story Behind this Recipe

I wanted to eat rich miso hot pot so I used hacho miso. If you add udon noodles to the broth at the end, it will also be delicious.
