Pour the 500 g of unsweetened yogurt into a sieve lined with cheesecloth, cotton gauze or paper towels, and leave to strain overnight (place a bowl beneath the sieve).
This is what the well-strained yogurt should look like.
Crack the eggs into a bowl, and add the sugar as well. Mix together well with a handheld mixer. This step is important! You can do it!!
When the egg mixture turns thick and pale it's done!
Add the strained yogurt, lemon juice, melted butter, and vanilla extract to Step 4, and mix it in with the handheld mixer.
Sift in the cake flour.
Change to a rubber , spatula, and cut and fold the flour in to the batter.
Pour into the mold, bake in an oven preheated to 170ºC for 50~45 minutes, and it is done.
Story Behind this Recipe
I wanted to make a healthy snack, so I created this recipe.
The key to making this delicious is how you whip the eggs. Please whip them very well - if you do it properly, the cake will turn out mild and delicious. Grease the mold with vegetable oil or butter beforehand, or line with parchment paper. It will make the cake easier to remove from the pan.
