This is a recipe for spicy and crunchy pickled bamboo shoots that you cannot stop eating! It goes well with 'ochazuke' (rice in a green tea based soup), as well as ramen noodles, and can be a perfect snack, too.
I added my own touch to my mother's pickled bamboo shoot recipe.
The garlic and ichimi spice can be omitted and it still will be tasty. Substitute the ichimi spice with chopped red chili pepper to make it less spicy.
