Avocado and Mixed Bean Salad

Avocados and beans go really well together. The anchovies in this salad make it great.

Ingredients: 2 servings

Mixed beans (canned)
100 g
Cherry tomatoes
4 to 5
● Anchovies, finely chopped
2 anchovies
● Grated garlic
1 clove
● Grainy mustard
2 teaspoons
● Lemon juice
1 teaspoon
● Salt
a small amount
● Pepper
a small amount
● Olive oil
1 teaspoon
● Honey
a bit less than 1/2 teaspoon


1. Peel and de-pit the avocado, and cut into 1 cm cubes. Cut the tomatoes up into 1 cm cubes too. Drain the canned mixed beans.
2. Mix the ingredients marked ● and add the avocado, tomato and beans.
3. This is delicious on top of slices of toasted baguette or English muffins, too. It's great to have with wine!
