Garlic-Miso Teriyaki King Oyster Mushroom and Pork Roll

Pork rolls wrapped with king oyster mushrooms glazed in a rich teriyaki sauce. It'll go well with rice.

Ingredients: 2 servings/makes 8

Thinly sliced pork
King oyster mushrooms
2 small
Salt and pepper
a small amount
as needed
Vegetable oil
1 tablespoon
1 tablespoon
1 clove grated
1 1/2 tablespoons
1 tablespoon
◆Soy sauce
1 tablespoon
50 ml
1/2 tablespoon
Toasted sesame seeds (white)
as needed


1. Quarter the king oyster mushroom lengthwise.
2. Cut the pork slices in half and sprinkle with salt and pepper on one side. Roll the king oyster mushrooms up inside the pork and lightly sprinkle with katakuriko.
3. Heat vegetable oil in a pan and place the rolls, seams side down, and cook until browned.
4. Rotate the rolls occasionally so that all sides are nicely browned. Sprinkle with the sake and cover with a lid. Let steam for 3 minutes.
5. Combine the ◆ ingredients and add to the pan and reduce. Add the mirin and when the sauce becomes glossy, add the sesame seeds.
