Low Calorie But Tastes Rich Okara Chocolate Cake Made in a Rice Cooker

This cake has no oil or flour and just 405 calories total. This is easy to make in a rice cooker. Even though it's made with okara, it's a moist, rich, and delicious cake.

Ingredients: 5 cup size rice cooker (or a 3 cup size)

Fresh okara
150 g (166 calories)
Sweetener (I used PAL sweet ☆)
80 g (0 calories)
Egg yolks
2 eggs' worth (170 calories with the egg whites)
Egg whites

Cocoa (unsweetened)
15 g (67 calories)
Coffee + hot water
1 tablespoon + 15 ml <---dissolve the coffee into the water (1 calorie)
Baking powder
1/4 tablespoon (0 calories)

Steps

1. Simple method: Put all the ingredients in a blender or food processor and mix well. Put it into a rice cooker and turn on the switch.
2. A little more involved method: Put all the ingredients except for the egg whites into a blender or food processor and mix well. Pour into a rice cooker bowl.
3. Make a stiff meringue with the egg whites. Once stiff peaks form, mix 1/3 of the meringue into the mixture from Step 2.
4. Add the remaining meringue from Step 3, fold in, and turn the switch on.
5. Steps for both methods: Once finished, turn the rice cooker bowl upside down and wrap with plastic wrap to retain the moisture. Once cooled, it's ready.
6. ※ Note ※ When baking, you don't need to grease the rice cooker bowl. We use the brown rice setting to bake this.
