The Lazy Edition: Sweet Potato and Yogurt Ice-Cream

An easy single serving of ice-cream made from strained yogurt.

Ingredients: 1 serving

Mashed sweet potato
50 g
Strained plain yogurt
30 g
Fresh cream
40 g (whipped weight)
1 teaspoon
1 teaspoon
as desired


1. Whip the cream until soft peaks form and add your sweetener of choice (not listed) to sweeten.
2. Mix together everything except the nuts, and cool in the freezer to harden. You can either mix half-way through freezing for a smooth texture, or eat before completely frozen and still soft. Sprinkle nuts on top to your liking.
3. Variation: I tried using boiled adzuki beans instead of sweet potato. It was really refreshing and tasted like adzuki ice cream.
