Crispy Fried Chicken with Sweet Vinegar Sauce

A sweet vinegar sauce with vegetables is the best match for juicy and crispy chicken breasts. A little bit of prep work make for delicious chicken breasts.

Ingredients: 2 servings

Chicken breast
1 to 1.5 (about 200-300 g)
1 tablespoon
Sugar (beet sugar or brown sugar)
1 teaspoon per 1 chicken breast
Ginger (grated)
1 piece
Grated garlic
1 clove
Soy sauce
2 teaspoons
Katakuriko or cornstarch
as needed
2 tablespoons
Sweet Vinegar Sauce
1/2 to 1
Mixed mushrooms
as desired
1/2 cup
3 tablespoons
3 tablespoons
★Red chili pepper (de-seeded and cut into small pieces)
a small amount
★Black pepper
a small amount
Katakuriko (for katakuriko slurry)
1 tablespoon
Water (for katakuriko slurry)
1-3 tablespoons


1. Cut the chicken into bite-sized pieces, massage in the sake and sugar, and let sit for 10 minutes.
2. Make the sweet vinegar sauce. Slice the onions, and cut the mushrooms into bite-sized pieces. Add the ★ ingredients to a small pot and heat. Then add the vegetables.
3. Heat a large amount of oil in a frying pan. Coat the chicken in katakuriko and fry until crispy.
4. Heat the sweet vinegar sauce again, and add the katakuriko slurry for thickness. Place the chicken on a serving dish, top with the sauce, and it's complete.
