Two-Ingredient Sweet Potato Pancakes

These are made with just 1 potato and soy milk!
They're also oil, sugar, and egg-free.
Sweet potatoes have 10 times the Vitamin C of apples!
These pancakes are chock full of fiber!

Ingredients: easy-to-make amount

Sweet potato
1 large (about 400 g)
Milk or soy milk
1/4 - 1/2 cup
just a pinch
Top with something like honey or maple syrup when serving to adults


1. Peel and grate the sweet potatoes. The katakuriko will hold it together, so there's no need to add water.
2. Add the salt and milk and mix well. Please adjust the amount of milk according to the moisture of the potatoes. You want it to be thick and a little heavy.
3. Melt some butter over medium heat on an electric griddle or frying pan. Spoon on 1 tablespoon of batter at a time and spread it out. Cook both sides until lightly browned.
4. Top with something like maple syrup to taste! By mixing in some powdered cheese or pizza cheese, you can transform these pancakes into a savory snack!

Regular baked sweet potatoes are rather boring, so I wanted to make something more like a proper snack.
