Sudachi Mayonnaise Sauce
Sudachi (if not, lemon or other citrus fruits)
squeeze 1 sudachi (about 1 tablespoon)
scant 1 tablespoon
Krazy Salt (if not, salt and pepper)
Rub salt and pepper gently onto the salmon. Coat with flour lightly. Mix the sudachi mayonnaise sauce ingredients.
Heat oil in a pan, add the garlic, and start pan-frying the salmon, skin side first. When the skin becomes crispy, flip, and continue pan-frying until cooked through.
Spread the sudachi mayonnaise sauce onto the salmon from Step 2, and it's done. You can add stir-fried vegetables on top if you want, which adds extra volume.

Story Behind this Recipe
I created this sauce recipe to highlight sudachi, which is a specialty of my hometown.
Be patient until the skin of the salmon becomes crispy and the salmon is cooked half-way through. If you like, you can add stir-fried vegetables on top, before spreading the sauce. It will make the dish heartier.
