When everything is nicely mixed, roll out to about 1 cm thick and cut the dough into shapes with cookie cutters. I think a heart shaped cookie cutter is easiest to work with.
Line a baking sheet with parchment paper and place the cakes on top. Blush the surface with beaten eggs Bake in an 180℃ preheated oven for 20 minutes, and they are done.
After Step 1, if you shape the potatoes into an ovals and bake in aluminum cup, you'll have regular Asian sweet potato cakes.
If the potatoes are too dry after microwaving, add 1~ tablespoon(s) of milk and adjust the consistency.

If you want to make it smooth, strain the potatoes. But I think mashing is enough. Cookie cutters with complicated shape are not good for this. You could use only egg yolks for the glaze, but I used a whole egg. Use the leftover eggs for something else.
