Spicy Soy Milk & Sesame Noodle Sauce

Spicy Soy Milk & Sesame Noodle Sauce

This is an easy dish I made when I had morning sickness. You can use it as dipping sauce or just pour it over the noodles.

Ingredients: Serves 1

Soy milk
3 tablespoons or more
Ground white sesame seeds
1 tablespoon
Mentsuyu (3x concentrate)
1 tablespoon
a small amount

1. Boil noodles (any kind you like), and rinse with cold water. Mix together all the ingredients except the ra-yu. Then add ra-yu (as much as you like).
2. I like to add an ice cube to the dipping sauce. It keeps the sauce cool while it melts, thinning the sauce as you eat.
3. On cold days, this is also delicious as a sauce for hot udon (or soba). (See next step)
4. To make a warm soup for the noodles: Dilute the mentsuyu with 1 part hot water and 2 parts heated soy milk. Top with ground sesame seeds and ra-yu.

Story Behind this Recipe

When I had morning sickness, I was eating nothing but soba. I got tired of the usual way of eating it, so I adapted a "Soy Milk Noodles" recipe to make dipping sauce for soba.
