Natural Medicinal Cooking! Burdock Root Salad

A nutritious root salad seasoned with sesame dressing that's easy to eat.

Ingredients: 4 servings

Burdock root
1/2
Lotus root
3 to 5 cm
Carrot
5 cm
Cucumber
5 cm
Daikon radish
5 cm
Dressing
Ready-made sesame dressing
2 tablespoons
Mayonnaise
2 tablespoons
White sesame seeds and black sesame seeds
As required
Salt
To taste
Mirin
1/2 tablespoon

Steps

1. Julienne the burdock root and carrot. Slice the lotus root thinly.
2. Blanch the 1 ingredients. Take out from the boiled water when the burdock root and carrot are tender and the lotus root is translucent. Drain well.
3. Julienne the daikon and cucumber.
4. Grind the sesame seeds and toss well with the dressing.

My child has asthma and when the season changes, his asthma worsens.
Daikon radishes, lotus roots and burdock roots are known for calming coughs. Burdock roots, daikon radishes and cucumber are for lowering a high temperature. Carrots and sesame seeds are good for the lung.
