Full of Nutrition Hijiki Fried Rice Flavoured with Miso

This is a Japanese-style fried rice made with plenty of hijiki seaweed, which is full of iron and minerals.
Please enjoy this dish when you feel like eating vegetarian food.

Ingredients: 1 serving

Hijiki seaweed (dried)
about 1 tablespoon (to your liking)
Green beans
3-4
Green onion or scallion
about 1/4
Egg
1
Hot cooked rice
roughly 1 bowl
Miso and sake
1 tablespoon each
Finely chopped ginger
about 1/2 teaspoon
Salt and pepper
a small amount

Steps

1. If you are using cold rice, microwave it in preparation. Soak the hijiki seaweed in water following the package instructions to reconstitute it.
2. Slice the green beans and green onion into thin rounds. Beat the egg in a bowl. Combine the miso and sake, then set aside.
3. Heat oil in a frying pan, and stir-fry the ginger and green onion. When fragrant, add the green beans, and continue stir-frying.
4. Add the beaten egg, and add the rice right away. Stir quickly, and continue stir-frying until the rice grains stop sticking together.
5. Swirl in the mixture of miso and sake, and continue stir-frying. Adjust the taste with salt and pepper, then you're done!

Story Behind this Recipe

I got a hint from a book I'd read a long time ago, and rearranged it to my own taste.
