Chestnut Cake With Pancake Mix

You can make this cake batter in about 15 minutes with pancake mix. The subtle flavor of the chestnut melts gently in your mouth.

Ingredients: 1 pound cake pan

Pancake mix
200 g
Chestnuts simmered in their skins
100-200 g
20 g
80 ml
Butter (or margarine)
80 g


1. Line a pound cake pan with parchment paper.
2. Preheat the oven to 170℃. Mash 100 g of the chestnuts using a fork.
3. Put the butter or margarine (brought to room temperature in advance) in a bowl, and cream it.
4. Mix in the sugar and add the beaten egg in 2-3 batches. Mix well after each addition.
5. Add the mashed chestnuts and mix well. Add the pancake mix and milk to the batter and mix in thoroughly with a spatula.
6. Pour the batter into the cake pan. Put 100 g of chestnuts (not mashed) in the middle of the batter if you like.
7. Bake in the oven at 170℃ for 45-50 minutes. Check to see if it's cooked by piercing the cake with a bamboo skewer. If it comes out clean, it's ready.
8. The baking time varies depending on your oven, so adjust the time and temperature accordingly!

Story Behind this Recipe

I received lots of chestnuts, and I made simmered chestnuts for the first time. I really wanted to make something with them, so I made this using pancake mix. It's easy, yet very delicious, so I uploaded it.
