Eggplant with Pork - Easily Made in the Microwave

You can make this in no time using your microwave oven! The umami of the pork penetrates the eggplant and is delicious! The added vinegar makes this overall very refreshing.

Ingredients: 2 servings

Eggplants (slim Japanese type)
Thinly sliced pork loin or roast
3 slices
A. Oyster sauce
2 tablespoons
A. Vinegar
1 tablespoon
A. Soy sauce
1 tablespoon
A. Grated garlic
1 clove
A. Grated ginger
1 piece
A. Sesame oil
1 teaspoon


1. Take the stem ends off the eggplants and cut in half lengthwise. Cut a crisscross pattern over the skin side of each eggplant half.
2. Soak in water to remove the bitterness. 3 minutes is fine!
3. Combine the A. ingredients.
4. Drain the eggplant slices. Make a slit from the thick bottom up to just below the stem (don't cut through).
5. Cut the pork slices in half, and stuff into the the slit of each halved eggplant.
6. Lay the eggplants in a heatproof dish, alternating the direction as shown. Give another mix to the combined A., and pour it over the eggplants.
7. Cover loosely with plastic wrap, and microwave for 7 minutes at 600w. Done!
8. Scatter finely chopped green onion to add color!
