Healthy Okara Sweet Potato

These contain lots of fibre with sweet potato and okara. The recipe doesn't require any heavy cream, butter, or sugar, so it's great for people on a diet!

Ingredients: 7-8 cups

Sweet potato with skin on
200g
Fresh okara
50g
Plain yogurt
80-100g
Honey
1 tablespoon
Egg yolk
a small amount

Steps

1. Rinse the sweet potato and slice. Cook for 5 minutes in the microwave. Once cool, peel the skin and finely chop.
2. Combine the sweet potato, okara, yoghurt, and honey into a bowl. Mash the sweet potato with a wooden pestle or similar utensil.
3. Put the mixture into aluminium cups, brush the tops with egg yolk. Bake for 10 minutes in a toaster oven.
