Unforgettable Scones

I wanted to eat the scones of a certain café that's since disappeared.

Ingredients: makes 16, 5 cm diameter scones

Cake flour
200 g
Cold unsalted butter
70 g
30 g
a pinch
Baking powder
2 teaspoons
1 Egg + milk
80 g together


1. Combine and sift the flour, sugar, salt, and baking powder.
2. Combine and mix well the egg and milk. Set aside.
3. Cut the butter (be sure it's cold) into 1 cm cubes and add to the powdered ingredients from step 1.
4. Use your fingertips to smash the butter, creating a bread crumb-like texture.
5. Add the egg and milk mixture from step 2 to the butter mixture in the previous step, a little at a time. Don't add all of it - leave a little.
6. Place in a plastic bag and let cool in the refrigerator. Preheat your oven to 210℃.
7. Take the cooled dough and stretch to a thickness of 1.5 cm. Cut into your desired shapes.
8. Place on the oven's baking pan, and brush the the leftover milk and egg mixture from step 5 on the top (just the top, not the bottom).
9. Bake in the preheated oven at 210℃ for 15 minutes.

Story Behind this Recipe

A long time ago a café near where I worked had these delicious scones. I'd eat them, and then everyday at home try various ingredients to make this. This is the result of various attempts.
