Chicken Livers Stir Fried In Spicy Miso

A slightly spicy miso flavored liver and Chinese chive stir fry.
It's not at all gamy, and really lifts your appetite.
You can make this with pork liver too.

Ingredients: 3 to 4 servings

Chicken livers
250-300 g
2 teaspoons
Soy sauce
2 teaspoons
a small amount
Grated ginger
1/2 teaspoon
Chinese chives
1 bunch
Bean sprouts (optional)
1/3 bag
● Miso
1 tablespoon
● Sake
1 tablespoon
● Sugar
1 tablespoon
● Doubanjiang
1/2 teaspoon


1. Take the fat and sinew (the white parts) off the livers, and take off any bloody parts too. They're the dark red round bits.
2. Slice the livers thinly, sprinkle with the pre-flavoring ingredients, and leave for about 15 minutes. Don't leave it for too long or it will become too salty.
3. Cut the chives into 4 to 5 cm long pieces. Combine the ● ingredients.
4. Heat some oil in a frying pan, pat the livers dry and pan fry them. Turn them over when cooked on the bottom, and heat through.
5. Add the bean sprouts and stir fry quickly. Add the ● ingredients and continue stir frying. Lastly add the chives, stir fry until wilted, and it's done.
6. If you're not using bean sprouts or if using 250 g of liver, reduce the flavoring ingredients and taste to adjust.
