Packed With Sweet Potatoes! Sweet Potato Cake

This is an easy-to-make cake using sweet potatoes, whipped cream, pancake mix, and egg.

Ingredients: 15cm diameter cake

Sweet potatoes (after peeling)
250 g
Vegetable based whipped cream (or heavy cream)
200 ml
Sugar (adjust amount to your preference)
20 g
Pancake mix
50 g
Powdered sugar (for decoration)
optional, to taste


1. Peel the sweet sweet potatoes and cut into small pieces. Wrap and heat in the microwave until soft.
2. Put the softened sweet potatoes into a bowl, mash, and let cool.
3. Add the whipped cream (liquid form is okay), egg, and sugar and whisk together in a circular motion.
4. Add the pancake mix and use a rubber spatula to mix.
5. Line the cake pan with kitchen parchment paper and pour the batter into the pan. Bake in an oven preheated to 170 degrees Celsius for 40~45 minutes.
6. The cake is done when a toothpick or skewer inserted into the center comes out clean. Once cooled, dust with powdered sugar to finish (optional).

I didn't have any butter in the house, so I used whipped cream, sweet potatoes, and pancake mix to make this cake.
