Basil Pesto Potato Fritters

This is an easy recipe made by simply flavoring steamed potatoes with homemade pesto and then grill. Perfect in your bentos!

Ingredients: Five 5 - 6 cm fritters

Basil pesto (Recipe ID: 647443)
2 tablespoons
Salt, pepper
a pinch of each


1. Chop the potatoes into bite-size pieces, soak in water, then steam (or microwave) until tender.
2. Mash the potatoes, mix in the basil pesto, and season with salt and pepper. Divide into 5 portions, then wrap each in plastic wrap to form a fritter.
3. Heat vegetable oil in a frying pan, then slowly grill both sides of the fritter cakes on low heat. Handle carefully when flipping over, since the batter is soft.
