● Taiwanese Pineapple Cake ●

This is a pineapple cake full of pineapples!
It's crispy and delicious like a cookie.

Ingredients: About 16 pieces

Pineapple Jam
Pineapple (canned)
300 g
60 g
Cookie batter
●Cake flour
150 g
●Baking powder
2 g
60 g
Raw cane sugar
40 g
Heavy cream
10 g


1. Cream the margarine until softened. Add the raw cane sugar and mix until fluffy.
2. Add the beaten egg a little at a time to Step 1, then mix in the heavy cream.
3. Sift the ● dry ingredients into the dough and fold in with a rubber spatula.
4. Divide into two portions, wrap in plastic wrap or put into plastic bags, shape into squares (13 cm x 13 cm), and let chill in the refrigerator.
5. Put the finely chopped pineapple and sugar into a pot. Simmer slowly until the liquid evaporates. Let cool.
6. Once the jam has cooled, spread on top of one of the dough squares.
7. Put the other square on top of Step 6 like a sandwich. Stick together the edges.
8. Bake in an oven preheated to 180 degrees Celsius for 30 minutes. Once cooled, cut into 16 pieces.
