No Oil- Hotel Scrambled Eggs

I just love the scrambled eggs served at hotel breakfast. You can get that richness and creaminess without oil.

Ingredients: 1-2 servings

2 or 3
Milk (or heavy cream)
2-3 tablespoons (1 tablespoon per egg)
to taste
to taste
Although I haven't tried it, people have told me that it takes longer if you use low-fat milk (just under 5 minutes). Keep this in mind.


1. Boil water in a large frying pan or saucepan.
2. Put all the ingredients into a heatproof bowl. This bowl should fit inside the pan in Step 1.
3. Mix it well.
4. Boil the water from Step 1 over high heat. Then put the bowl from Step 3 into the large pan as a bain-marie.
5. The eggs will start cooking from the sides and bottom of the bowl, so bring these parts into the centre of the bowl while mixing. Repeat for several minutes.
6. Bring it into the centre like this. I think a spatula is easiest, but you can use chopsticks, fork, spoon, etc.
7. Gradually the eggs will become soft and creamy. When it is at this stage, it will just need a little longer.
8. Just before the eggs are at the perfect consistency, take it off the bain-marie. Mix the eggs a few times.
9. Transfer to a serving dish and it's done! Top with black pepper, ketchup, Parmesan, etc. of your choice.
10. I have topped this on top of Napolitan.
11. It's really tasty, and it's fluffy and creamy without using butter or oil. Guilt-free indulgence. I don't think there are many people who wouldn't like this texture.
