Pitch-black Bagels

Chewy and fluffy bagels.

Ingredients: 5 small bagels, or 3 large bagels

✿Bread (strong) flour
280 g
✿Cake flour
20 g
4 g
10 g
✿Instant dry yeast
4 g
✿Black cocoa
15 g
180 g
White chocolate chip
40 g
Honey (for kettle boiling)
2 tablespoons


1. Knead all ✿ ingredients in a bowl for 10 minutes. Divide into 5 (or 3) portions. Let rest for 15 minutes.
2. Roll out the dough as in the picture. Scatter the chocolate chips and roll up from the corner. Make sure to secure the seam well.
3. Flatten one side and fold in the other end. Close the seam well!
4. The hole in the center should be about 2 fingers wide.
5. Let the dough rise for 30 minutes. (You could also use the dough rising setting on your oven.)
6. Preheat the oven to 200℃. Boil water in a large pan or a frying pan. Mix in the honey to dissolve.
7. The water should only be bubbling slightly! Do not boil vigorously!
8. Boil the bagels, 15 seconds on each side. Drain, and bake in preheated oven for 15 minutes.
