You don't need to proof this dough. Just mix and bake. If you like a bouncy and chewy texture, you should try it.
I wanted to make "Polipia" from my local bakery myself, and I went through lots of trial and error.
★ Adjust the baking time and temperature accordingly, depending on your oven. ★ If you only add sesame seeds into the dough, use 2/3 teaspoon salt. If adding ham and cheese, use about 1/2 teaspoon salt!★ This bread hardens if it's over-baked. So stop baking when it's light brown.
