Indian Sautéed Cauliflower (Aloo Gobi)

A quick-prep, easy Indian home cooked dish taught by my mother, that uses tons of cauliflower. Guaranteed to be high in nutrients and also is a perfect match with Japanese rice.

Ingredients: 2 to 3 servings

Cauliflower
1/2 a head
Ginger
2 cm
Garlic
2 cloves
Onion
1/2
Vegetable oil
1 tablespoon
Turmeric
1/2 teaspoon
Cayenne pepper
1/4 to 1/2 teaspoon
Cumin powder
1 teaspoon
Salt
To taste
Optional
Potatoes
1/2 (Refer to Helpful Hints)

Steps

1. Chop cauliflower into small 1 cm bits, and mince onion, garlic, and ginger.
2. Heat oil in a pan, and sauté garlic and ginger.
3. Once they turn aromatic and a nice golden brown, add the onion and sauté until it caramelizes.
4. Add cauliflower and lightly stir.
5. Add turmeric, cumin powder, cayenne pepper, a scant 1/2 teaspoon salt, and stir.
6. It should look like this.
7. Cover with a lid, and steam for 10 minutes, or until the vegetables become tender. Stir from time to time to prevent burning.
8. Adjust salt to taste. Serve with curry or rice.
