Add the chicken, sake, and salt into a plastic bag, and massage. Leave it for about 30 minutes.
Lay the Step 1 chicken in a non-stick frying-pan without oil (drain off the marinade).
Pan-fry both sides over medium heat, cover with a lid, and cook over low heat until cooked through. Brown the chicken as shown in the picture.
Wipe off the oil from the meat with a paper towel. Add the basil pesto, and continue frying while coating the meat with the sauce, then done.
Story Behind this Recipe
Since I made plenty of basil pesto, I tried cooking chicken with it.
When you are using a non-stick frying pan, please pan-fry the chicken without oil since a lot of fat comes out from it. Basil pesto contains olive oil, so I think it's better to use the least amount of oil as possible.
