Crushed Cucumber in Chinese-Style Marinade

I marinated the cucumber in a sweet but tart sauce. Crush the cucumber so the seasonings coat them well.

Ingredients: 3 cucumbers' worth

1 teaspoon
◆ Doubanjiang
a bit less than 1/2 teaspoon
◆ Sugar
1 tablespoon
◆ Vinegar
2 tablespoons
◆ Soy sauce
1 tablespoon
◇ Sesame oil
1 teaspoon
◇ Ra-yu
to taste


1. Sprinkle the cucumbers with a little salt and roll on a cutting board. Bash with a rolling pin to make cracks. Break into small pieces with your hands. Sprinkle with more salt, rub, and leave for 20-30 minute. Squeeze out the water.
2. Put the cucumber pieces in a plastic bag with the ◆ ingredients (adjusted to taste), and rub over the bag. When the seasoning ingredients are well distributed, add the ◇ ingredients and rub again.
3. Rest for several hours. The flavors will soak into the cucumber and it'll be delicious.
