Whip the tofu (no need to drain) and egg with a whisk until smooth.
Add the pancake mix and sugar to Step 1, and mix well with a spatula.
Pour Step 2 mixture into a butter-greased pan, and bake it for 30 - 40 minutes at 180℃ /355℉.
It goes well with apple and red wine compote.

This tofu cake recipe was chosen to enter a cooking contest. I think the reason why it was chosen is because it is an easy and delicious recipe. Everybody can make this cake without fail.
At Step 1: Mixing the tofu and egg well until they becomes smooth makes a fluffy cake with no lumps. Keeping the excess water from the tofu instead of draining it helps the dough stick together. This cake is healthy but filling, so this is a perfect diet cake.
