Brown Rice Tofu Cream Gratin

Great for people watching their weight or on a macrobiotic diet. This is a healthy gratin made with zero animal products. Brown rice definitely goes better with the tofu cream than white rice.

Ingredients: 1 serving

Cooked brown rice
120 g (1 bowl)
Mushrooms & vegetables
as much as you like
Firm tofu
100 g (1/2 block)
Garlic powder or grated garlic
as desired
Non-additive, unsweetened soy milk
100-200 ml
Salt and pepper
to taste
Panko (optional)
1 generous pinch


1. Finely chop the tofu, put it in a heatproof container and heat in the microwave for 3 minutes. Toss out any water that is produced.
2. Combine the tofu and soy milk in a food processor and blend for 3 minutes. Stir-fry the vegetables and mushrooms and pour the tofu cream sauce over the top. Season with garlic, salt, and pepper.
3. Fill bottom of a gratin dish with the cooked brown rice and pour the sauce over the top to finish. Sprinkle on some panko and toast in a toaster oven until golden for extra flavour.

Story Behind this Recipe

I was aiming for a macrobiotic gratin that doesn't use any animal products (milk, cheese, mayo etc.) You can get plenty of protein from the tofu, so you don't need to add any meat or bacon.
