Easy Dry Curry for a Quick Dinner

If you have rice, there won't be any need to keep the kids waiting!! With the use of a food processor, you'll be able to chop the ingredients up more finely, so small children and elderly family members can enjoy it too.

Ingredients: 3 servings

Pork mince
300 g
Onion
1/2
Carrot
1/2
Potato
1
Bell pepper (if available)
2
Eggplant (if available)

Tomato (if available)
1
Garlic (tubed)
1 teaspoon
Ginger (tubed)
1 teaspoon
Curry roux mix
2-3 cubes
Cooking oil
As needed

Steps

1. Cut all the vegetables into 1 cm cubes. Put the carrot and potato in a heatproof bowl with a bit of water and microwave for 3-4 minutes.
2. Finely chop up the curry roux blocks.
3. Spread the oil in the frying pan and fry the garlic, ginger, meat and vegetables in that order. When they are cooked thoroughly, add the curry roux, mix well and it's done.
4. You can skip Step 1 if you use a food processor. It'll chop the ingredients up very finely, so it'll make the curry even easier for small children and elderly family members to eat.
