Fennel and Orange Salad

Fennel and Orange Salad

You can use celery instead of fennel.
The freshly squeezed orange juice makes this refreshing.
These ingredients will have a detoxifying effect.

Ingredients: 2 servings

Fennel or celery
1 / 2~3 stalks
Ginger juice (may be omitted)
1/2-1 teaspoon
Nuts, sunflower or pumpkin seeds
1 tablespoon
Olive oil
1 tablespoon
Orange juice
2 tablespoons
1/3 teaspoon
a small amount
Toppings (optional)
Cottage Cheese
2 tablespoons
Christmas Spice Mix Recipe ID: 1634666

1. Thinly slice the fennel. Celery is also detoxifying, so you can use it instead.
2. Peel the orange. Use a knife to cut from the top to the bottom. Squeeze the fruit with membranes and cut. Don't throw out the squeezed fruit.
3. Add a bit of oil at a time to the 2 tablespoons of orange juice to emulsify. Add salt and pepper.
4. Add the ginger juice, fennel, and oranges and mix. Let sit for about 30 minutes.
5. Top with sunflower seeds, pumpkin seeds, or nuts.
6. Top with cottage cheese and olives.
7. Sprinkle some Christmas spice mix (Recipe ID: 1634666), cranberries, and cashews on top.
