Shred the cabbage. Microwave in a container for about 40-50 seconds to soften.
Add the egg, salt and pepper and mix together.
Heat oil in a pan and fry the egg from Step 2. Make a ditch in the center and drizzle in the sauce.
Shape into an omelet and add water to the pan. Cover the pan and steam for about 1-2 minutes (to cook through).
Drizzle sauce (about 1 tablespoon) onto the sides of the pan, coat, and it's done.
Story Behind this Recipe
I wanted a satisfying omelet using only a single egg, so I added cabbage to bulk it up.
If you're simply serving it on a plate, you don't necessarily need to steam the omelet. If you're making this for bentos, it's easy because all you do is stop after Step 5 and microwave for about 40 seconds in the morning.
