Spinach and Shirasu Tossed with Mayonnaise Ginger Sauce

Mayonnaise and ginger - a refreshing combination. I mixed shirasu (tiny salt-cooked sardine) and seasoned nori with blanched spinach.

Ingredients: Serves 4

Spinach
1 bunch
Shirasu
2 tablespoons
Seasoned nori seaweed
3 sheets
● Mayonnaise
2 tablespoons
● Finely grated ginger
1 teaspoon
● Vinegar
1 teaspoon
● Soy sauce
1 teaspoon
● Sugar
1 teaspoon

Steps

1. Blanch the spinach in salted water, drain and thoroughly squeeze out the excess water. Cut into 3 cm pieces.
2. Tear the seasoned nori into tiny pieces.
3. Combine all ingredients marked with ●, toss evenly with the spinach and shirasu, then mix in the nori. Chill in the refrigerator before serving.

Story Behind this Recipe

I often make ohitashi - a cold side dish of cooked vegetables, seaweed, seafood etc. I wanted to try a different version from my usual repertoire.
