Cut the pork in half. Mix A together, and rub into the pork for about 10 minutes.
Mix B together.
Chop the scallions into chunks, slice the red chili pepper, and finely chop the ginger.
Coat the pork meat from Step 1 in katakuriko, drop each into 355°F/180°C oil one at a time, and fry until crisp.
Heat oil in a frying pan, and sauté step 3. Add Step 4 once it's aromatic, and sauté some more.
Add Step 5 to Step 2, and lightly mix it together. Arrange on plates, scatter sliced green spring onions on top, and it is done.
Story Behind this Recipe
This is a recipe that I had my mom teach me.
When adding meat to the frying pan in Step 5, you can just lightly mix it in and go straight to Step 6. Mix the dressing so that it infuses with the meat in Step 6. The meat will become a bit juicy from coating in katakuriko. Then it is perfectly done.
